HEALTHY! CLEAN! GUILT-FREE! LEMON BARS!!!!!

Oh my goshhhh….you HAVE to try these clean lemon bars I created. HO-LEE-COW…AMAZING!! I actually liked them better than the box kind (and fyi, I am a total lemon bar junkie that used to eat that whole box myself). These are a yummy and healthy Summer snack for the kids (my boys love them), and are perfect for parties and get togethers. They are super easy and quick to make, with not toooooo many ingredients, which is a huge plus to me!! These are definitely a regular sweet treat in my house!!! 🙂

INGREDIENTS:
(CRUST)
-Coconut oil for greasing pan
-3/4 cup COCONUT OIL
-2 cups of flour (I used BOB’S RED MILL WHOLE WHEAT FLOUR)
-3/4 cup STEVIA IN THE RAW
1/4 tsp. HIMALAYAN PINK SALT

(FILLING)
-4 large eggs + 2 egg yolks
-2 cups Stevia In The Raw
-1/3 cup flour (again, I used Bob’s Red Mill Whole Wheat)
-1 tsp grated lemon zest
-1 cup of fresh squeezed lemon juice (about 7 lemons)

DIRECTIONS:
CRUST: Preheat oven to 350 degrees. Grease a 9×13″ pan with a generous amount of coconut oil and line with foil, leaving a 2-inch overhang on all sides…grease the foil with oil. Mix the coconut oil, flour, Stevia and sea salt in a food processor (or I used my NINJA with the bread making attachment) until it forms a dough-like texture, (about 1 minute). Press evenly into the bottom of pan and about a half inch up the sides of the foiled pan, make sure there aren’t any cracks. Bake for about 30 minutes or until the crust is golden.

While the crust is baking, prepare the FILLING: In a large bowl, whisk the whole eggs and yolks, Stevia and flour until smooth. Add in the lemon zest and juice, and mix together well. When the crust is golden brown, remove from oven and reduce the temperature to 300 degrees. Pour the filling over the crust and put it back in the oven. Bake for about 30 minutes or until the filling is just set.

Let the bars cool in the pan, then refrigerate until firm, at least 2-3 hours. Using the sides of the foil, lift out of pan, lay flat on counter, and slice. Sprinkle Stevia on top. AND ENJOY!!!!
